Mike Jones So Pro Div 3 Tacos

Cook up the ground beef with some spices, pepper that kind of
crap.
Mix in the tomato sauce.
Mix in some black beans from a can and some corn (frozen or from
a can).
Let that cook up.
Crack a few eggs into it and watch that shit thicken.
Spoon on to some tortillas and enjoy w/ some hot sauce.
Local Hero Tuna Melt
tuna
herbs (like cilantro or dill)
black beans
eggs
toast
cheese
Warm up some tuna (from a can) with some spices and herbs.
Add in the black beans and an egg (the hi-fat version uses mayo
here) and watch that shit thicken.
Spoon on to toast and cover lovingly with cheese.
Stick that in the oven (or toaster oven if yr into that scene)
and let that cheese melt. Ooooh baby !
Jen's Crazy "Tuna ceviche"
one can of tuna one whole tomato some cilantro some onion (green, spanish, whatever) a lime olive oil plantain chips or nachos |
(Spadina Circle Variation : Tuna + Olive oil + Lime juice + Capers + Cilantro + Chopped olives)
Finely chop onion and cilantro.
Dice tomato.
Drain oil/water from the tuna.
Toss tuna with onion, cilantro, and tomato.
Squeeze in whole lime.
Add a bit of olive oil if the tuna isn't oily out of the can.
Mix it all up.
Add salt and pepper to taste.
Serve as is or with some plantain chips or nachos on the side.
Also can add some hot pepper sauce if desired.
Always serve with lager (Corona, Sol, Dos Equis are best).
Tim Chan Tuna Cakes

Make the mashed potatoes or use some leftovers.
Fry up the diced onion/peppers/corn in a pan over medium-low
heat, just so they're a little softened.
Mix the tuna, mashed potatoes, and diced vegetables in a bowl,
adding some cayenne pepper or hot sauce to taste.
Form the mixture into little cakes about 2-3 cm thick and throw
them in the fridge for a bit or until you're good and ready.
Pan fry over medium heat with a decent amount of oil, about 5
minutes each side.
Serve with some mayo on top. Booyahkah !
Mash:
Boil up some potatoes until you can stick a fork in them
(easily).
Salt the water first to increase the boiling temperature.
While that's happening, put some milk in a saucepan and throw in
some herbs (like thyme or rosemary), some garlic, and some
butter. Heat that up over low heat and then strain it.
Mash up the potatoes and add the strained milk mixture as needed.
Throw in some chopped chives to taste.
